Two little known features with iOS 5 are the camera’s auto focus and auto exposure lock. To use these handy features: tap on the camera app, aim your iPhone, and then tap and hold on the screen the area that you would like the focus and exposure to be locked. When the blue border starts flashing, you can lift your finger and the focus and exposure should be locked. You will see confirmation at the bottom on the screen that should read “AE/AF Lock.” To remove the lock, simply tap the screen anywhere or leave the app.  This feature also works on the iPad 2.
